Brewer / Cellar Professional
Location: Lake Zurich, IL
Department: Production
Phase Three Brewing is a leader in crafting high-quality, innovative beers with a passionate following. We are seeking a dedicated and skilled Brewer / Cellar Professional to be a key player on our production team. This is a hands-on role that is integral to every step of the brewing process, from wort production to cellaring and finishing.
This is an opportunity to apply your expertise in a fast-paced, quality-focused environment, working alongside a talented team to produce a diverse and exciting range of beers.
What You'll Be Doing (Key Responsibilities)

  • Execute all day-to-day brewing and cellaring operations with precision and consistency.

  • Wort Production: Operate our 3-vessel, 15 bbl brewhouse for single and double-turn brew days.

  • Cellar Management: Perform transfers, crash tanks, and carbonate beer to specification.

  • Yeast Management: Harvest, pitch, and manage yeast according to our quality standards.

  • Quality & Finishing: Operate our centrifuge, conduct dry hopping, and perform VDK checks and other quality-control measures.

  • Sanitation: Meticulously perform CIP/SIP on brewhouse vessels, fermenters, brite tanks, and other equipment.

  • Maintain a clean, organized, and safe production floor at all times.

  • Troubleshoot process and equipment issues, collaborating with the team to find effective solutions.

What You'll Bring (Qualifications & Attributes)

  • Experience: A minimum of 3-5 years of combined professional brewing and cellar experience in a production brewery.

  • A Collaborative & Independent Spirit: You thrive in a team setting but have the drive to manage your daily tasks autonomously without constant supervision.

  • Physical Strength & Stamina: You can comfortably lift 55 lbs, maneuver heavy hoses, and work on your feet for extended shifts in a physically demanding environment (hot, cold, wet, noisy).

  • Technical Acumen: You have a strong understanding of brewing science, sanitation, and fluid dynamics. Basic math, computer, and record-keeping skills are essential.

  • Attention to Detail: You have a passion for quality and a meticulous approach to your work, understanding that small details make a big difference.

Preferred Skills (Not required, but a major plus)

  • Direct experience operating a centrifuge.

  • Experience brewing on a 15 bbl or larger system.

  • Mechanical troubleshooting and preventative maintenance skills.

  • Forklift certification and experience.

  • Formal brewing education or certifications (e.g., Cicerone, IBD).

  • Hourly Pay: A competitive starting range of $24.00 - $26.00 per hour, based on experience.
